If I change it to a helmet, I won’t be able to coordinate it with Doki’s face. Can I proceed with it as a hat?

Yea i’m not asking to change category, you can keep “hat” category and add > overrides wearable > helmet.
And users will still be able to combine it with an helmets in game if they chose, thats just the default setup @Hancos
